My fav Curry Recipe

Sauté Mushroom, Pepper, Onion, add meat or veggie base (beef, fish, lamb, tofu / chickpeas etc) in a large pan until done. Mushrooms take the longest, add these first and cook well.

Add below to a large pot, bring to boil covered:

  • Coco milk (don’t get coconut cream – its already creamy enough)
  • Chicken / beef or vegetable stock
  • Add spices like cumin, garam masala, and curry paste

Add diced potatoes to pot. Cook until potatoes are soft. Then add Cauliflower, spinach, any other veggies you want

Make rice on side (Minute rice is easy)

Add contents of pan into the pot and stir. Add spices or mango to taste.
